Thai Fish Cakes

This is the basic fish cake recipie I have used for years, I think it originally came from a Keens's booklet.

 Thai-style fish cakes

Serve with lime, coriander and peanuts, or a dipping sauce made from lime, fish sauce, water, sugar, and chilli.  You can omit the chillies, coriander and spring onions from the food processor and add them in with the beans if you like to have them more authentic - looking.  In Thailand they are mixed by hand.

Ingredients:

1tbls green curry paste  (or keens green curry powder)
1 tblsp fish sauce
2 tbsp cornflour
1 egg
1-2 fresh red chillies, finely chopped,
2 tbsp chopped coriander
2 spring onions, chopped
2 long snake beans, chopped

peanut or vegetable oil for frying.

Method:


Combine all the ingredients except for beans in a food processor and pulse until well combined.  Add snake beans and shape into 12 flat, round patties.

Shallow fry in hot oil, carefully turning on each side until brown.  Drain on paper towel.
